About: ILLAHE, pronounced Ill-Uh-Hee, is a local Chinook word meaning “earth” or “place” or “soil”
Vinification: whole cluster press this pinot gris right after picking and ferment 20% in a foudré and neutral french oak barrels and 80% in stainless steel. The wine rests on the lees throughout fermentation. This, along with the large oak cask, gives the wine more texture and is a nod to a more Alsatian style.
